This ABC cobb salad recipe is a perfect summer meal. The avocado, bacon and corn combination pairs well with a homemade sweet vinegar dressing.
Avocado, Bacon and Corn Cobb Salad Recipe
Every summer I get a bit obsessed with corn on the cob. There is just nothing like fresh, local Ohio grown corn. YUM! While I could certainly eat it right off the cob for several meals a week, I thought I would try something a little different (at least for us).
We planted a little garden this year and to my surprise, things grew! I had a nice head of lettuce that was just calling to be used in something other than an ordinary salad. So the ABC Cobb Salad was born! I used some leftover bacon and corn, added to my homegrown lettuce and topped it with some feta and avocado. Wow, delish!
This salad is really fine as is, but as you know we are meat-a-tarians, so I added some grilled chicken in for hubs. You can also use your own fave salad dressing. The one I used is a Sweet Vinegar Dressing, which is actually for my famous Black Bean and Corn Dip (always a crowd pleaser!). Overall, it made for a light but filling main dish!
ABC Cobb Salad Recipe
Ingredients
- Cobb Salad
- Avocado
- Bacon crumbles
- Corn fresh cut from the cob is best
- Lettuce your fave mix, I used romaine, iceberg and whatever that was that grew in my garden!
- Feta Cheese
- Cherry Tomatoes
- Optional
- Grilled or Rotisserie Chicken
Sweet Vinegar Dressing
- 1/4 C apple cider or white vinegar
- 1/4 C oil
- 1/4 C sugar
- garlic salt to taste
