What type of oil? Olive Oil? Something else?
Mary Hoover says
Great question. I use regular old vegetable or canola oil. But you could experiment with others.

I have made this so many times! We LOVE it! For the dressing I use a little sugar (maybe a teaspoon) and squirt a few squirts of Stevia in for the sweetness. It’s always divine and you don’t have to feel guilty. Thanks so much for this recipe!

Debbie, thanks so much for commenting/rating. So glad you enjoy the recipe. It’s one of my “go-tos” too. And I love the sweetener suggestion thanks!
Aimee says
This is sooooooo GOOD! Do you have the nutritional information, I”m on WW
Mary Hoover says
Thanks Aimee, it is quite addicting. I don’t have the specific nutritional info other than just accounting for each ingredient- like the corn, beans and feta. You can use a reduced fat variety of the cheese. And I would suggest maybe making the dressing with your fave sugar substitute (since it does have quite a bit of sugar in the dressing).
Sorry that’s not exact, but hope that helps. My Aunt has done WW for years, maybe I can have her look at this and tell me how many points it would be.
Aimee says
Thanks, the WW knowledge will keep me from eating the whole thing in one setting lol!

So here is what my Aunt said, hope it helps!
Everything but feta cheese, oil, and sugar are 0 points! 1 oz feta is 3 pts, olive oil 1 tsp=1 pt, 1 tsp sugar =1pt! So add up those ingredients and divide by serving size!
