When we first got married, I received a small Bisquick recipes magazine at a bridal shower. The pages were filled with comfort food faves and good “beginner” recipes for this new wife. To this day, hubs still loves one of those recipes. Of course, I had to tweak it a bit (he likes a little more topping to cake ratio). So below you will find my modified, yet easy, Streusel Coffee Cake recipe. Let me know if you like it as is- or make a modification of your own.
And as you can see from the pics… This is the recipe that I first discovered my kitchen hack for cutting in butter. That cheese grater really does make it easier to “cut in” the butter for the streusel topping.
Ingredients
Coffee Cake
- 1 2/3 C baking mix
- 2/3 C milk
- 2 T sugar
- 1 t cinnamon
- 1 egg
Streusel Topping
- 1/3 C baking mix
- 1 t cinnamon
- 1/2 C packed brown sugar
- 3 T firm butter
Instructions
- Preheat oven to 350 and grease a round cake pan.
Streusel Topping
- Combine baking mix, brown sugar, cinnamon in a bowl.
- Cut in the butter using a fork or pastry blender (see my kitchen hack to make this easier). Set aside
Coffee Cake
- Combine baking mix, milk, sugar, cinnamon and egg. Mix until smooth.
- Spread in pan.
- Then sprinkle with topping.
- Bake 15-18 min, or until toothpick comes out clean.

HA! I love that you noticed the plates. These were the plates we used when I was a kid and my mom gave them to me a few years into our marriage. I definitely don’t have a full set anymore… so maybe I will take you up on that. LOL! 😉
