There are a lot of great planning websites as well. The Mom’s Panel on disney.com is great. In addition:

There are a lot of FREE or somewhat inexpensive activities to do at Disney…examples most of the resorts offer some time of evening movie with the beach resorts offering the movies outside on the beach! (hammocks and beach swings at the Polynesian are awesome), also most of them have campfires (the beach ones) and the campfire at the Fort Wilderness features the characters Chip and Dale, there is a water electrical parade that you can see from the beaches and each resort has fun activities that are free and open (two of our favorites – hula lessons at the Polynesian and night vision goggles at the Animal Kingdom Lodge – FUN!). There are horseback rides at the Fort Wilderness for little ones – they can go around the stable area for just $5. Instead of springing for the Bippity Boppity Botique, girls can get pixie dust and their hair done at the Harmony Barbershop for just a fraction of the cost. Just a few off the top of my head!
